I luv fresh baked goodies for breakfast but really who has the time or energy to get up and do that? Not me for sure! I luv to sleep and its takes me a couple of cups of coffee to get going in the morning and by then I would have to be out the door or getting busy for the day. This solves that problem.
The night before assemble all your ingredients.
Best Ever Muffins from BHG New Cookbook Circa 1968
1 3/4 c sifted flour
1/2 c sugar
2 1/2 tsp baking powder
3/4 tsp salt
1 well beaten egg
3/4 c milk
1/3 c oil
Heres the make ahead part. Take all the dry ingredients and sift together in a big bowl, make a well, like this
Now take all the wet ingredients and do the same thing.
The next morning I pushed the button for the coffee, turned off the crockpot, set the oven to 400 and got the wet bowl out of the fridge. Stir and mix with the dry. Add fruit of your choice. Done!
Spray your pan well don’t mess with muffin cups this early or you could set them up the nite before. Add batter to pan, 3/4 full. Pop in the oven.
Now go take a hot shower or enjoy a cup of coffee, whatever you need to do, breakfast is handled 😀
In 20 mins I’ve had coffee, showered, got my face on and am ready to eat.
I made 12 muffins but you could get 6 big ones if you wanted. So there you have it breakfast that super easy, delicious and good for you.
I understand that we are all super busy these days and its hard to make a good nutritious breakfast and get everybody ready at the same time, so I am the hunt for make ahead recipes so that when I go back to work, life will still be run smoothly.
This is part 1, the main course so to say, Crockpot Breakfast Casserole. You are going to luv this one, its super easy and cooks while you sleep. Its even a great way to clean out the fridge at the end of the week, cause I am sure if you are like me you have tons of leftover bits and pieces.
Assemble your ingredients and start by spraying your crockpot so your potato base doesn’t stick.
Next meat… You could skip this all together again your choice.
Next its veggie time.
Ok now cheese, I luv the big bag from Walmart its a taco blend and is perfect for practically everything and for a lazy girl who doesn’t want to spend hours shredding cheese all month its perfect! Bonus $8 lasts all month, and super cheap!
Next prepare your eggs. I used 8 but there are only 2 of us and I wanted to go big and have leftovers. I would say family of 4 use 12.
Spice it up according to your taste, Salt n Pepper of course. I also added Garlic, Paprika and Parsley. I think next time I am going to add some Celery Salt too and cut the regular salt.
To your egg mix you also want to add 1/2 to 1 c milk depending on how many eggs you use. You could also use heavy cream or half and half for a richer base. I think I will try this when its for company.
Now just pour egg mix over the rest and turn on low for about 6 hours.
And now the finished product…
Thats it easy peasy! Hot breakfast with no morning crazyness involved!

Recently I bought a Welbuilt AMB 3900 (check out bread machines here) at my favorite local thrift shop, Madera Thrift Center. It’s a great store if you spend more then $10 they will stamp the back of your receipt which you can take back any day and get 50% off of everything!
I had spotted this little gem the week before but was limited on funds and shopping for clothes for the steppies at the time, so I passed it up. 😦
Last week I went back to browse and to my surprise it was still there. It was marked at $12.99 but I had my trusty coupon and got it half off… what a steal.
BF was skeptical when I brought it inside but when I plugged it in and it beeped alive he was like good, now make some bread! (LOL, not really) I knew it worked because the store has outlets you can plug electrical items into before you buy. I never would have bought it without being able to check it first.
So Sunday when the steppies where here I thought now is the perfect time to try it out, we can do it together (they LUV helping me in the kitchen) and then they can have fresh bread for breakfast. Now sometimes I am not the brightest bulb in the box, and I just automatically grabbed my trusty BHG cookbook and went to breads, white. We mixed it all together and added it in closed the lid and hit menu #1 and start. Then we went to play.
About 2 hours later I didn’t smell baking bread; it smelt like burnt plastic. I checked the machine, no smoke, not too hot, tried to look in the little window, it looked like bread, so I left it to do its thing. I just hoped the smell wouldn’t effect the bread.
Finally it beeped to tell me it was done, I rushed over, lifted the lid and…
My bread exploded!
I should have taken a pic it was truly awful! And I was truly disappointed. Good thing I had just bought a new loaf of bread so I didn’t have to rush out for any for breakfast.
Once everyone was sleeping I pulled out my laptop and got to researching and found this.
So today we were running low on bread and I thought ok lets try again.
I followed the instructions from the youtube video and again added my ingredients, chose 1 and start. The I waited and worried and waited and worried… I must have check it a dozen times. No plastic smell this time, just glorious baking bread, just like momma’s. I took that for a good sign.
I was playing a game when she beeped at me. Nervously I went to the machine and opened the lid and viola ….
Yes! Victory is mine! I will never buy another loaf of bread again. Its crust is perfection, the inside is soft and delicious and my whole house smelled amazing.
I will be pinning lots of recipes for my favorite new appliance.
PS the bread you see in the background is about to be put in the food processor for crumbs, and the last kind of that over-processed, fating bread you will see in my house!
So I got this recipe off pinterest from a friend, D, who got it here. It has been around for awhile under other names, I changed the name (BF said Sluty Brownies might offend but personally they are some sluty brownies, LOL). I did not however change the recipe, why mess with perfection.
These are super simple and I was trying them for the first time a dry run to say for a friends homecoming after she brings her new baby home. I always dry run a new recipe before using it as a gift.
First preheat to 375.
Assemble your ingredients. I used these but you could use any mixes or go from scratch, its up to you. I think next time I will go from scratch just to see how it works.
Next start with the chocolate chip cookies, since they are the base. Follow the directions on the mix or recipe you chose. Fill bottom of a 9×9 pan. Now my cookie mix was made in the processor I like to do this as it gives my cookie dough a nice chocolate hint but not too much, again up to you, but try it sometime I guarantee you will luv it!
Now take the Oreo Double Stuffs (make sure its Double Stuffs so you can taste the cream filling when done). Press them into the cookie dough, easy peasy.
Moving onto the brownie mix, again follow mix or recipe directions then pour over the cookies.
Place in oven and bake for 45 mins.
Check for doneness, it might be too gooey give it another 15 mins but remember that brownies keep cooking after removed from oven so be careful. 45 was perfect for mine.
They really could not have been easier and taste better. This is going to be a go to recipe for gifts, and potlucks.
