Today I am showing you the second part of an Easy Make Ahead Breakfast, Make Ahead Muffins. Check out the Crockpot Breakfast Casserole here.

I luv fresh baked goodies for breakfast but really who has the time or energy to get up and do that? Not me for sure! I luv to sleep and its takes me a couple of cups of coffee to get going in the morning and by then I would have to be out the door or getting busy for the day.  This solves that problem.

The night before assemble all your ingredients.

Best Ever Muffins from BHG New Cookbook Circa 1968

1 3/4 c sifted flour

1/2 c sugar

2 1/2 tsp baking powder

3/4 tsp salt

1 well beaten egg

3/4 c milk

1/3 c oil

Heres the make ahead part. Take all the dry ingredients and sift together in a big bowl, make a well, like this

Then you cover and set aside.

Then you cover and set aside.

Now take all the wet ingredients and do the same thing.

You will need to stir again in the morning but so much easier than trying to do it all!

The next morning I pushed the button for the coffee, turned off the crockpot, set the oven to 400 and got the wet bowl out of the fridge. Stir and mix with the dry. Add fruit of your choice. Done!

Spray your pan well don’t mess with muffin cups this early or you could set them up the nite before. Add batter to pan, 3/4 full. Pop in the oven.

Bake at 400 20 - 25 mins, depends on your oven.

Now go take a hot shower or enjoy a cup of coffee, whatever you need to do, breakfast is handled ūüėÄ

In 20 mins I’ve had coffee, showered, got my face on and am ready to eat.

Now isn't this a pretty easy way to have home baked goodies for your family in the morning without getting up before the sun.

Easy Make Ahead Breakfast Part 1

Talk about a hardy breakfast with no morning hassle!

Talk about a hardy breakfast with no morning hassle! This is it!

I understand that we are all super busy these days and its hard to make a good nutritious breakfast and get everybody ready at the same time, so I am the hunt for make ahead recipes so that when I go back to work, life will still be run smoothly.

This is part 1, the main course so to say, Crockpot Breakfast Casserole. You are going to luv this one, its super easy and cooks while you sleep.  Its even a great way to clean out the fridge at the end of the week, cause I am sure if  you are like me you have tons of leftover bits and pieces.

Heres what you need, and you can add or substitute according to your families tastes

Assemble your ingredients and start by spraying your crockpot so your potato base¬†doesn’t¬†stick.

Any potatoes will do, fresh, frozen, fries, tots, shredded, its up to you and your clan and what you have on hand

Next meat… You could skip this all together again your choice.

I used all the leftovers from the fridge! Yea ;)

Next its veggie time.

Green was apparently my theme I had green onion and green peppers on hand.

Ok now cheese, I luv the big bag from Walmart its a taco blend and is perfect for practically everything and for a lazy girl who doesn’t want to spend hours shredding cheese all month its perfect! Bonus $8 lasts all month, and super cheap!

Next prepare your eggs. I used 8 but there are only 2 of us and I wanted to go big and have leftovers.  I would say family of 4 use 12.

Spice it up according to your taste, Salt n Pepper of course. I also added Garlic, Paprika and Parsley.  I think next time I am going to add some Celery Salt too and cut the regular salt.

To your egg mix you also want to add 1/2 to 1 c milk depending on how many eggs you use. You could also use heavy cream or half and half for a richer base. I think I will try this when its for company.

Now just pour egg mix over the rest and turn on low for about 6 hours.

Bomb Brownies

So I got this recipe off pinterest from a friend, D, who got it here. It has been around for awhile under other names, I changed the name (BF said Sluty Brownies might offend but personally they are some sluty brownies, LOL). I did not however change the recipe, why mess with perfection.

You can't just eat one, but you better plan on a heavy workout the next day

These are super simple and I was trying them for the first time a dry run to say for a friends homecoming after she brings her new baby home. I always dry run a new recipe before using it as a gift.

First preheat to 375.

Assemble your ingredients. I used these but you could use any mixes or go from scratch, its up to you. I think next time I will go from scratch just to see how it works.

Here's what you need

Next start with the chocolate chip cookies, since they are the base. Follow the directions on the mix or recipe you chose. Fill bottom of a 9×9 pan. Now my cookie mix was made in the processor I like to do this as it gives my cookie dough a nice chocolate hint but not too much, again up to you, but try it sometime I guarantee you will luv it!

Now take the Oreo Double Stuffs (make sure its Double Stuffs so you can taste the cream filling when done). Press them into the cookie dough, easy peasy.

Moving onto the brownie mix, again follow mix or recipe directions then pour over the cookies.

Doesn't that look yummy!

Doesn’t that look yummy!

Place in oven and bake for 45 mins.

Check for doneness, it might be too gooey give it another 15 mins but remember that brownies keep cooking after removed from oven so be careful. 45 was perfect for mine.

Oh yea

Oh yea

They really could not have been easier and taste better. This is going to be a go to recipe for gifts, and potlucks.

Easy Marbled Easter Eggs

A friend gave me this easy way to make marble look Easter eggs, I would using suggest gloves and tongs as you are working with straight dye not diluted. You are going to luv the results

Image

First get regular shave cream not gel. You want to use containers that you don’t mind if they get stained and spray a good amount of cream in.

Next with your dyes simply dot the cream. ¬†Since I mixed my own colors I actually used a paintbrush to dab the dye on the shaving cream. Then with a toothpick swirl. Don’t mix, just swirl together, otherwise you will just get a nicely colored egg but not a marbled.

I used one pan and started with a teal green that I created by mixing colors together, blue and green more green then blue. ¬†Choose colors that you like; you don’t have to be super fancy or artistic, do what you enjoy.

Image

This is my final cream mixture using a teal, orange and yellow dye.

Remember crafting should be fun, so play with it!

Now take your egg (hard-boiled or hollowed) and roll it gently through the mixture making sure to cover entire egg.  Gently set aside to dry, I used the egg crate so as not to wipe off any of the shave cream.

Image

That’s the teal color painted onto a piece of egg shell in the background. Isn’t it beautiful? I just luv teals, peacocks, aquas, all the greens.

I then added orange (red-yellow) and rolled an egg through.

Orange and Teal

Finally I added some neon yellow and rolled one more egg.

Teal and Neon Yellow

Now the hard part, waiting for the dyes to set on the egg.  Give it about 15 mins. Then simply wipe off the cream with a paper towel and viola gorgeous marbled eggs!

This is how I set mine to let them dry while waiting.

I think these would be beautiful on an Easter buffet as hard-boiled eggs.
